With the fall season comes endless flavors to create delicious dinnertime dishes, but delicious meals do not have to be difficult to prepare. As we embrace the  season and prepare for the holidays,  simple, healthy and hearty meals that easily fit into busy schedules become a necessity. Simply pick your favorite meal combination at the Prepared Food counter and follow the simple heating instructions at home for a gourmet meal in a flash. Below are a few of my favorite plant-based and comfort food combinations from Heinen’s Fall Meals in a Flash Chart.

Perfectly Plant Based

Vegan Chicken Enchilada
Ethnic flavors are so exciting and it’s fun to try new things. One of the new meatless entrees is a Vegan Chicken Enchilada so satisfying you’ll never miss the chicken and cheese. Red enchilada sauce and Mexican spices bathe a filling of sautéed vegetables, plant-based meat and dairy free cheese. Paired with Shishito Peppers and prepared pico de gallo salsa and guacamole, this meal is a Mexican fiesta on a plate.

Parmesan Mushroom Casserole
Another meatless standout is the Parmesan Mushroom Casserole. You know how everyone’s favorite side dish at Thanksgiving is the stuffing? How about a wedge of cheesy, mushroom-rich casserole for a weeknight dinner? The woodsy mushrooms, salty Parmesan, herbs and spices infuse the bread cubes with a pop of flavor that makes this dish either a stand-alone entrée or a side dish to a meat-based entrée as well. When paired with a salad from the salad bar or Grilled Zucchini from the Prepared Food case, this meal really satisfies.

Impossible Bolognese
An enticing meal doesn’t have to include a six-ounce portion of meat in the middle of the plate. A case in point is Impossible Bolognese with Sweet Potato Noodles. Strands of nutritious and delicious sweet potato stands in for traditional noodles and the tomato-based Bolognese sauce is loaded with ground beef…but not. Your family will never suspect that this dish is meatless. I pair suggest pairing it with Italian Farro with Cannellini and Greens or a tossed green salad from the salad bar for a never-boring weeknight supper.

Comfort Food Classics

All Beef Glazed Meatloaf and Moroccan Lamb Shanks
The Meals in A Flash Chart also includes many familiar family favorite entrées. Sometimes dinner just isn’t complete without a dish like Heinen’s All Beef Glazed Meatloaf. When paired with Garlic Mashed Potatoes and green beans, this dinner takes me back to the good old days when mom made meatloaf every Wednesday night. And for a special night, the tender Moroccan Lamb Shank can’t be beat when served with Heinen’s Asparagus Risotto from the freezer case. The creamy risotto cooks in minutes, while the North African spiced lamb heats up in the microwave. Perfect for company, this is a dish that takes hours to make at home, but Heinen’s allows you enjoy it after only a few minutes of simple heating.

With all the flavorful main dish entrees, vegetables, grains and pastas from around the world you won’t become bored and you won’t miss meat either.
