Summer Sips: Raspberry Mint Mojito

As the heat of summer returns, we find ourselves reaching for a refreshing beverage to counter it. We crave a drink that is easy to make and doesn’t require too many ingredients so that it can be enjoyed in no time. A mojito is the perfect summer sip to fit those requirements. Add some raspberries to your concoction for a pop of color and burst of flavor you’ll be sure to enjoy…

Raspberry Mint Mojito

Yield: 1 cocktail

  • 2 tablespoons fresh mint leaves + a few leaves for garnish
  • 6 fresh raspberries + a few berries for garnish
  • Juice from 1 lime
  • 1 tsp granulated sugar + extra for sugar rim
  • 1 cup of ice
  • 2 oz white rum
  • ½ cup soda water

Create sugar rim on your glass by wetting rim with lime juice and dipping in granulated sugar. Tip: Use two shallow saucers, one for lime juice and one for the sugar.

Add mint leaves, raspberries, lime juice, and sugar to the glass and gently muddle* to release the flavors.

Add ice and rum and top with soda water. Garnish with more fresh raspberries, mint leaves and lime slices.

*Muddling is a gentle twisting motion that releases the flavors of your ingredients. Do your best not to shred the mint as it will release a bitter flavor.
