Bruschetta Burger with Blue Cheese Potato Cakes

We all have ways of skipping the bun these days, but why not make your burger even more delicious with a blue cheese potato cake as the bun? It would be difficult to eat with your hands but that’s a small price to pay for a burger this good.

Start to finish: 15 minutes
Hands on time: 10 minutes


2 Bruschetta Burgers from the Specialty Meats Case
Salt and freshly ground black pepper
1 tablespoon olive oil
2 Blue Cheese Potato Cakes from the To Go Case
1/2 cup Bruschetta Topping from the Take-Away Salad Bar


Salt and pepper the burgers.

Heat a 12-inch skillet over medium-high heat and add the olive oil. When the oil shimmers add the burgers and cook them for 3 minutes. Turn and cook the other side for another 3 minutes. Reduce the heat to low, cover and cook for another 2 minutes for medium.

Slice the potato cakes in half as you would a roll. Lay them out on a plate and microwave until warmed.

Place the bottom potato cake on each of two warmed plates and top with the burger. Spoon some of the bruschetta topping over the burger and top with the remaining potato cake half. Eat happily.
