National Grilled Cheese Sandwich Day Recipe: Pancetta & Raclette Grilled Cheese

April 12 is one of my favorite days of the year: National Grilled Cheese Day!  Grilled cheese is such a great medium in which to experiment with all kinds of cheese and ingredients. When you experiment with new cheeses you never know what you’ll get but let’s face it, when you mix great cheese and crusty bread you pretty much can’t go wrong. Right? This recipe, a personal favorite, proves that it only takes a few awesome ingredients to construct an unforgettable sandwich!

Grilled Cheese Ingredients
“When you have really good ingredients, you only need a few. Even the butter has to be good!”

Pancetta & Raclette Grilled Cheese


Pancetta (pre-sliced)
Kerrygold Pure Irish Butter
Sourdough bread (2 slices)
Raclette cheese (alt option: Spring Brook Farms Reading)


Preheat your oven to 350°F.

Take the pre-sliced pancetta and place on a baking sheet. Cook in the oven until crisp.

Butter two slices of sourdough bread with the Parmesan Reggiano butter.

Slice the Raclette cheese into 1/4 wide inch slices and cut off the outside coating.

Place the crisp pancetta and three pieces of Raclette in between the sourdough bread.

Heat a frying pan on medium heat and fry your sandwich until the cheese oozes out of the sides.
