Paleo Sweet Potato Pancakes

Over the last few years, Paleo diets have become popular for a number of reasons. The diet encourages eating the way our ancestors did, and it means that food becomes far more natural, simple and healthy for the body.

This new and old way of eating works wonders on this old-school breakfast favorite, since these pancakes let you experience the joys of comfort food while still feeling good about your dietary choices. If you want to indulge even more, insert a hearty piece of chocolate on top to add a dash more sweet to your sweet potato pancakes.

Paleo Sweet Potato Pancakes


  • 1 small sweet potato
  • 1 egg
  • 1 cup almond flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 cup almond milk
  • 1 tsbp maple syrup


  1. Cook sweet potato either by roasting in the oven for 50 minutes at 400 degrees F or microwaving for 3-4 minutes (make sure to poke holes in sweet potato for both cooking methods) and peel
  2. Combine all ingredients together by hand or in a blender until a batter is formed
  3. Cook on a griddle
