Below are a few of my favorite plant-based and comfort food combinations from Heinen’s Spring Meals in a Flash Chart.
Jackfruit Tuna-Less Salad
Ethnic flavors are so exciting and it’s fun to try new things. One of the new meatless entrees is a Vegan Tuna Salad so satisfying you’ll never miss the tuna. Loaded with celery, red onion and lemony mayo, this dish takes you from spring to summer for quick and easy lunches and light suppers. Hollow out a tomato to hold the salad and add a warmed Lemon Risotto Cake to round out the meal.
Parmesan Mushroom Casserole
Another meatless standout is the Parmesan Mushroom Casserole. You know how everyone’s favorite side dish at Thanksgiving is the stuffing? How about a wedge of cheesy, mushroom-rich casserole for a weeknight dinner? The woodsy mushrooms, salty Parmesan and herbs and spices infuse the bread cubes with a pop of flavor that makes this dish either a stand-alone entrée or a side dish to a meat-based entrée as well. When paired with a salad from the salad bar or Grilled Zucchini from the Prepared Food case, this meal really satisfies.
Cauliflower Cheddar Cake
An enticing meal doesn’t have to include a six-ounce portion of meat in the middle of the plate. A case in point is Cauliflower Cheddar Cake. Delicious and good-for-you cauliflower is tossed with green onion and cheese to make a little cake that’s big on flavor. When paired with Orange Roughy with Spring Vegetables, this dinner is a feast for the eyes and taste buds as well. You can also pair the cake with Smoked Pork Chops for a heartier dinner; simply add warmed Green Beans to round out the plate.

Veal Meatloaf with Marsala Mushroom Sauce
