What’s For Dinner? Zoodle Caprese

Eating vegetables is much more exciting when they’re disguised as pasta! Hearty, flavorful and full of fresh ingredients like tomatoes and pre-spiralized zucchini, this Italian-inspired Zoodle Caprese is a healthy meal in minutes.

Ingredients

  • Spiralized Zucchini
  • Heinen’s Basil Pesto
  • Hickory Harvest Walnut Halves
  • Non Pareil Capers
  • Tomz Mixed Snacking Tomatoes

Instructions

  1. Roughly chop walnuts and capers and cut tomatoes in half.
  2. Heat a large sauté pan over medium high heat. Add a small amount of Heinen’s Olive Oil and sauté walnuts, capers and tomatoes until tomatoes begin to give off some liquid.
  3. Add zucchini and pesto. Sauté until zucchini is heated through.
  4. Enjoy with your favorite fresh garden salad.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.

    1. Hi Michelle, we recommend using one package of zoodles and as much or as little pesto, walnuts, capers and tomatoes as you like.
